Ready for Competition: Nori & Smoked Salmon Egg Spirals!

First of all, my apologies for the lack of new posts of late: I was experiencing some technical difficulties in accessing this blog and hence unable to upload any new content, but luckily this has finally been fixed! Hooray!

Now I wish to share with you a delicious creation of mine that was inspired by a recipe competition hosted at my workplace. The challenge was to create a healthy recipe using at least two ingredients from the following list of ‘superfoods’:

  • Avocado
  • Lentils
  • Beetroot
  • Citrus fruits
  • Broccoli
  • Yoghurt
  • Eggplant
  • Seaweed (nori)
  • Fish
  • Spinach
  • Mint
  • Blueberries
  • Nuts
  • Basil
  • Olive oil
  • Ginger
  • Quinoa
  • Eggs
  • Pumpkin seeds

As it happens, the competition coincided with the birthday of a close family friend and so I wanted create something that was a little bit fancy as surprise treat! After playing around a few ideas in my mind, these pretty bites of nori & smoked salmon egg spirals with spinach salad, sesame-yoghurt sauce and pistachios came into being! Any guesses how many ingredients I have used from the list?

Crunchy fresh salad leaves and toasted pistachio lends a great textural contrast against the moist omelette and rich smoked salmon. The whole mouthful is brought together with the creamy sesame-yoghurt dressing made with Greek yoghurt, sesame paste and a dash of dijon mustard, lemon juice and honey.

I love the spiral pattern created by the nori rolled inside the omelette and the colourful interplay between the yellow omelette, orange smoked salmon, green baby spinach and pistachio nuts! I’d imagine that these would make perfect finger food- do try it out at your next party for something healthy and delicious!

RECIPE:  Nori & Smoked Salmon Egg Spirals with Spinach Salad, Sesame-Yoghurt Sauce and Pistachios
 
Nori- egg spirals:
4 eggs, beaten together
salt, to taste
1 sheet of roasted seaweed
vegetable oil
1. Put a 20cm non-stick pan on a medium-low heat and lightly oil the pan using a pastry brush or a paper towel. Season the egg with some salt.
2. Add 2/3 of the egg to the pan and cook until half-set, then lay the nori sheet over the egg
3. Pour the remaining egg over the nori and cook until the top of the egg is half set.
4. Using a spatula, lift one end of the egg and roll over itself to create a log. Cook until the egg is just set. 
5. Transfer the nori-egg spiral onto a cutting board, trim the two ends and and slice into 4 pieces
Sesame-Yoghurt Sauce
6 tbsp thick Greek yoghurt
6 tsp sesame paste/ tahini
2-3 tsp sesame oil
1-2 tsp dijon mustard, or to taste
lemon juice, to taste
clear runny honey, to taste
salt, to taste
1. Combine all ingredients together
 To Assemble:
4 nori-egg spirals
4 leaves of baby cos lettuce
some baby spinach salad leaves
4 slices of cold-smoked salmon
1 quantity of sesame-yoghurt sauce
some pistachios, toasted and roughly chopped
1. Place a small mound baby spinach leaves on top of each a baby cos lettuce leaf.
2. Sit a piece of nori egg spiral on top of each baby spinach mound.
3. Sit a slice of smoked salmon on top of each nori egg spiral
4. Drizzle over the sesame-yoghurt sauce over the smoked salmon and scatter over the pistachio pieces.
5. Serve with remaining sauce for dipping and pistachio pieces for sprinkling.
